  • 8 oz pasta (linguine or fettuccine)
  • 16 oz cremini mushrooms, sliced
  • 3 tbsp butter, divided

  • 3 tbsp bourbon
  • 2 tbsp brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta. Boil according to package directions. Before draining, reserve 1/2 cup of the pasta water — this starchy liquid is your secret weapon for a silky sauce.
  2. Sear the mushrooms. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the sliced mushrooms in a single layer and let them sit undisturbed for 3-4 minutes until they develop a golden-brown crust. Stir and cook another 2 minutes.
  3. Glaze with bourbon. Add the garlic and cook for 30 seconds. Remove the pan from the heat, carefully pour in the bourbon, and use a wooden spoon to scrape up all the browned bits from the pan. Return to heat.
  4. Add the brown sugar. Sprinkle in the brown sugar and stir continuously for about 2 minutes, until the mushrooms are coated in a glossy glaze and the liquid has reduced by half.
  5. Make it creamy. Reduce heat to low. Add the remaining tablespoon of butter, the heavy cream, and the Parmesan. Stir until the cheese melts and you have a smooth, luxurious sauce.
  6. Bring it together. Add the cooked pasta directly to the skillet. Toss to coat, adding splashes of reserved pasta water until the sauce is loose and silky — it should cling to every strand.

Jeff's Tip: Don't crowd the mushrooms in the pan. If they're stacked on top of each other, they'll steam instead of sear. Cook in two batches if needed — the golden crust is what gives this dish its depth.
