Here's something we use constantly: when a recipe calls for deglazing with bourbon, always remove the pan from the heat first. Pour the bourbon in off the flame, scrape up the browned bits, then return to heat. This keeps the alcohol from igniting (yes, it happens) and gives you more control over the reduction. It's the kind of small habit that makes a big difference.
📖 From the Kitchen: Why We Started This
Todd and I were sitting at Five Brothers Bar and Kitchen, debating whether a good bourbon glaze needed more sugar or more time. Three Old Fashioneds later, we'd sketched out the first ten recipes for what became Boozy Bourbon Chefs on a cocktail napkin. That napkin is pinned to the wall in our test kitchen now. The recipes have been tested a hundred times since, but the philosophy hasn't changed: if we can make it, you can make it, and it's going to be delicious. That napkin started all of this, and this newsletter is our way of bringing you into that conversation every week.
